The summer harvest. Two bright green and soft leaves and a bud, fresh and hand-picked. Improved technology resulted in an improved palette comparing to the first flush green tea. Summer harvest 2021.
Quite a unique green tea from an organic tea farm in Noord-Brabant, with strong associations of seaweed and the silty sea air. Both refreshing and energizing.
Dry leaf
The dry leaf is olive-green to dark green, rolled to long, thin flagella.
The fragrance of the dry leaf is soft with gentle floral notes.
Infusion
The transparent infusion has a soft, lime-like colour and a slightly milky hue.
The bouquet, when prepared with 80°C, clean water, is quite unique, reminiscent of a silty sea odour with hints of seaweed. The taste is gently sour and a bit creamy.
When the tea is prepared with near-boiling water, the sea associations become less, and sour and astringent notes take over, giving a grapefruit-like taste.
Brewing method
Brew tea with hot water (75-92°С) in a porcelain gaiwan or in a teapot of porous clay. The proportion is 3-4 g per 100 ml. After a first few (3-4) flash-infusions of about 1-2 seconds, increase the infusion time, if necessary. You can repeat infusing up to approximately 5-6 times, while the tea remains tasteful.
