Moychay Classic Sencha is a first-harvest green tea crafted in Yame City, Fukuoka Prefecture, a region renowned for producing sweet, umami-rich teas. This blend, primarily Yabukita, showcases the region's ideal tea-growing conditions: mountainous terrain, abundant water from nearby rivers, and temperature variations that enhance the tea’s complexity. The result is a Fukamushi-style Sencha that is buttery, well-balanced, and free from astringency or bitterness.

Brewing Instructions

Classic Japanese Brewing

  • Tea-to-Water Ratio: 2g per 100ml
  • Temperature: 70°C
  • Steeping Process:
    1. First infusion: Brew for 45–60 seconds, then pour into cups.
    2. Second infusion: Brew for 30 seconds.
    3. Third infusion: Brew for 15 seconds.

Western Brewing

  • Temperature: 70°C
  • Tea-to-Water Ratio: 5g per 250ml
  • Steeping Times:
    1. First infusion: 1 minute
    2. Second infusion: 30 seconds
    3. Third infusion: 2 minutes at 75°C

100ml Brewing

  • Temperature: 70°C
  • Tea-to-Water Ratio: 4g per 100ml
  • Steeping Process:
    1. First Infusion: Brew for 40 seconds.
    2. Second Infusion: Brew for 15 seconds.
    3. Subsequent Infusions: Add 5–10 seconds for each additional steeping.

Brewing notes: For Japanese green teas, we recommend pouring infusion through a strainer.
