Days are getting colder. Time to get the water boiling and cosy up over some strong boiled tea.

Most people are familiar with steeping tea where tealeaves are left to sit in water. Boiling tea is the oldest method of preparing tea. As the water goes trough different stages of boiling the teamaster can tell the temperature of the by looking at the size and shape of the bubbles. Once the water is close to boiling a vortex is made inside the boiling water. A tea ball which is formed from loose leaf tea is thrown into the vortex. While the tea is spinning around the pot and moving up and down the water starts to boil furiously. This spectacle of bubbles, spinning tea and fire results in tea with a soft balanced taste, thick texture and strong effect.

 

The way in which boiling tea was practiced one thousand years ago in China has been described by the famous tea-sage Lu Yu. This method has been adapted to be performed using modern tea and equipment. Tea production and methods of consumption have always been changing. While some tasty and revitalising teas are boiled for you  will taken through the history of tea preparation, tea ceremonies and their origins.
